working on healthy habits

yesterday was one of those days where i got sucked into a bunch of “quick” projects, but when i came up for air 3 hours had passed and it was after midnight. ugh.

needless to say, i’m dragging today and am thankful that it’s what i ate wednesday!

this months theme is “fall” into good habits <—i love it!

i would say that i did exhibit some good habits yesterday. i kept snacking to a minimum, got in plenty of fruits & veggies (although i could have used some more greens), and prepped tons of food for the rest of the week!

here are my meals:

breakfast of apple, banana, oatmeal raisin cookie nutty butter, and supplements

breakfast included a small apple, a banana, and the star of the show: oatmeal raising cookie nutty butter!!!

i had two iced coffees before getting to lab, but i didn’t take any pictures.

lunch was a grab-and-go meal.

i had an indian fare meal from trader joes and a honeycrisp apple!!! i only picked up 4 honeycrisps at the farmers market this weekend because we already had a whole bag of apples at home, but now i’m kicking myself for not getting more! they’re the best apples ever.

also, honeycrisps just taste like fall to me – my favorite season!

i had to stop at the supermarket after work and mr. kombucha hopped into my cart.

i seriously can’t make it out of the store without grabbing one of these. i rationalized it because i ended up skipping my planned coffee-shop stop since i already had a beverage. that works, right?!

once i was home, it was afternoon snack time. i ate lunch around noon and brad doesn’t get home for dinner until 8ish most tuesdays, so i know i needed something to hold me over.

afternoon snack: lentil chips and jalapeno greek yogurt dip

chips + dip it was! these lentil chips are my new favorite. the only “flour” in them is from lentils. and i know i’ve talked about this dip on the blog before. it’s perfect. it tastes great with veggies, chips, on a sweet potato, etc. i picked up two containers of it this week.

while i was waiting for brad to get home, i putzed around on a bunch of projects and prepped tons of food for the rest of the week. i hard-boiled some eggs, made two pots of iced coffee, roasted veggies, and made some surprisingly tasty egg muffins with ham and veggies for easy breakfasts! after all of that, brad finally got home so we could eat! dinner was my favorite meal yesterday and i’m bummed that the photos are so bad since we ended up eating after dark.

i found some portobello mushroom caps at the farmers market last weekend and knew i wanted to stuff them somehow. i mixed together a great garlic parmesan filling, roasted some yellow peppers and yellow cherry tomatoes and just hoped it would all work together.

surprise ending? it tasted amazing. i was pretty proud of myself for that. i’m going to re-make this dish soon with good photos so i can post the actual recipe!

we ate the mushrooms with some salmon filets.

dinner: lemon pepper salmon

i found some great quality wild-caught salmon filets at aldis of all places and now we’re hooked on them. the filets come individually wrapped, so it is too easy to just thaw two filets, bake them for 10 minutes in oil + lemon juice and salt + pepper, and have a great dinner component ready!

snacking when i get home from work is a big one for me. i think i did a good job eating a normal portion of the lentil chips + dip yesterday, but all to often i go overboard. i’m working on it!

That chips and dip combo looks like an awesome snack! I’ve never heard of lentil chips…where do you buy yours?

I do the same thing – eat too much for snacks and then am not hungry for meal times.

I’ve gotten out of my smoothie habit and need to get back into it. How else will I consume half a bunch of kale for breakfast? :)

I also cannot leave Woodman’s without getting at least one kombucha. They were on sale when the store first opened for $3 each! What flavor was the one pictured? I love the Gingerberry.

the flavor in the picture is grape chia! have you tried the ones with chia seeds in them? i’m hooked! i don’t think i’ve tried gingerberry. i like gingerade a lot though!

I’m glad you are loving the Nutty Butter! I aim to please. :)

Also, I have to literally put my hand up to shield my eyes when I go into Whole Foods so I do’t buy kombucha every time. It is the only place that sells it (at least where I shop consistently). Thankfully, it is also the cheapest price in town. I wonder if I should branch out beyond Gingerberry and Trilogy. I just love those so much!

Honeycrisp ARE delicious…but look for Envy and Sweetango if you can find them…
