hooray for wednesday! this week is going by really quickly – probably because i’ve got so much on my plate. i’m feeling a bit pressured about all i have to do, so i hope it continues to speed by while i’m getting things done.
i remembered to take photos of all of my meals and snacks yesterday in preparation for today’s what i ate wednesday!

the day started out with some coffee at the computer as i put together yesterday’s blog post.
then the coffee moved with me to the counter where i also ate my breakfast smoothie while finishing up my iin module.
this smoothie had banana, spinach, very cherry berry blend, vanilla protein powder, maca powder, and almond milk. it was delicious!
i also had my vitamins (minus the multi, which i’m pretty sure is the culprit of my stomach troubles. gotta find a new multi!).
after a couple hours of work work work, i gathered lunch. i say gathered because i pretty much ate a bunch of leftovers that were in the fridge.
the last of my triple bean salad.
some pearl cous cous with veggies leftover from a couple nights ago.
and some grapes!
[don’t mind all of the dog hair on the table. we have dogs. it happens.]
after more work, errands, and csa pick-up in the afternoon, i came home and had a little snack at the computer while i did more work.
a coconut larabar (my first time trying this one – i like it!) and an applesauce squeeze pack.
then i finished up a couple things on the computer and made myself dinner.
i made these lentil sloppy joes a while ago and froze some individual portions of it, so i finally thawed one and plopped it on top of a huge salad.
i should have put something in these photos for size comparison because this was a gigantic salad. that bowl is meant to be a serving dish…
anyway. the salad had lettuce, tomatoes, mushrooms, and lentils. simple, tasty, and filling!
but not quite satisfying enough. i wanted something sweet, and since i can’t have the ice cream that’s in the freezer because i’m not eating dairy right now, i whipped up some banana soft serve!
this batch had an extra treat – cocoa powder and a tiny bit of almond extract to add that cakey flavor!
that satisfied my sweet tooth for the night!

it’s definitely not second nature yet for me to avoid dairy. i really really really wanted to put some cheese on my salad for dinner and i would have given just about anything for some real soft serve or frozen yogurt for dessert, but i think i’m handling it pretty well.

on the agenda today – nothing but work! i’m hoping to kick my to-do list’s butt again today. i’m going to have to get busy though, i’ve got a lot on it!

what do you usually eat when you’re craving something sweet after dinner?
dark chocolate or banana soft serve work for me, but brad and i do make the occasional culver’s run for some frozen custard!

I’ve yet to find a multivitamin that doesn’t make me sick to my stomach. I’ve tried taking them with food, without food, before bed, everything, and I’m always left feeling like I’m going to vomit.

I hear ya on the multivitamin. I now just take Vitamin D and my One-A-Day. I have to do it after lunch though because otherwise, I feel sick :\
Can you go into detail about this banana soft serve? This sounds and looks delicious!

Good luck to you on staying away from dairy! I don’t think I could give up my cheese curds or ice cream. I’m a huge Ben and Jerry’s fan and that is my go to when I need a bite of something sweet after dinner

Last time I was at Trader Joe’s I picked up some little bon-bons (bite sized ice cream + cake covered in chocolate) and some dark chocolate covered peanut butter cups, so that I can have a little treat after dinner. And now I’m addicted to having them every night.

I love me some banana soft serve. Just enough creamy goodness without the guilt! Also, I’ve been looking into IIN, How do you like it? Does it take a lot of time? I’m currently in school for Psychology also, so I don’t want to jump in if its too much to handle on top of my current school. What are your thoughts?

I typically eat a date with some almond butter if I’m craving something sweet. Or break off some dark chocolate! Can’t go wrong with that!
SO true about the dog hair. I only have one dog and her hair ends up EVERYWHERE! I want some of that banana soft serve. Perfect treat!

OMG you are the most creative, adventurous eater I’ve ever seen. I need you to come live in my house and make me try/eat these things. A few questions. When you add spinach to a smoothie how do you do it? Fresh leaves? Pieces of frozen spinach? How much of each thing do you add? What is very cherry berry blend? And where do you get the vanilla protein powder/maca powder… oh and what IS maca powder?
I’ll give you a second because I’m pretty sure I caused you to faint due to my intense questioning.
One more- does the banana soft-serve taste really banana-y? I don’t mind a little banana in a fruit smoothie but I am not sure I’d like the banana smoothies if they’re too banana-flavored… interested to hear your thoughts, I’ve seen it on Pinterest but haven’t seen anyone blog about making it til now!

i add a couple handfuls of fresh spinach to my smoothies! it just put it in first and add the rest of the ingredients on top of it and blend away.
very cherry berry blend is an AMAZING frozen fruit blend from trader joe’s. i’m obsessed.
i’ve tried lots of protein powders. right now i’m loving sunwarrior vanilla. i won it in a giveaway, but i’m pretty sure you can order it from amazon. i got the maca powder from vitacost.com. it’s a powder that i have been adding to my smoothies to try to help with my skin/acne. i haven’t noticed much of a difference if any, though, so i probably won’t buy any more once this package runs out.
here’s my smoothie “recipe”:
(i don’t really measure, so these are estimates)
2 cups loosely packed spinach
1/2 – 1 banana (i cut really big ones in half…)
1 cup very cherry berry blend
1 scoop protein powder (or whatever the serving size is for the protein powder you use)
2 tsp maca powder
1.5 cups unsweetened vanilla almond milk
blend away!
and your last question – yes, banana soft serve is VERY banana-y. adding cocoa powder and the almond extract did help because they added in other flavors too.
I love the sprinkles on the whipped bananas and that you added almond extract.

If I want something sweet.. I will usually have dark chocolate. I also like having vanilla pudding with a banana and some peanut flour protein frosting. I usually have some sort of sweet every night.
