what i’ve been eating lately

by Sarah Zinkel on January 9, 2013

my diet has been on a rollercoaster lately!

i definitely got way to into holiday season eating and i’ve got the tight pants to prove it. add to that the fact that i’ve been trying to get used to my new work schedule and back into the habit of preparing lunches, and it’s not good.

this week i’ve turned a bit of a page, though.

i did some food prep over the weekend and i feel like i’m completely ready to make good choices this week.

want to see?

i’ve started packing breakfast and lunch to eat at work. i’m never hungry right when i wake up, so eating about 2 hours later puts me eating at my desk at work. so far, it’s going well, though!

yesterday’s breakfast looked like this:

wiaw - breakfast

a banana, blood orange chobani, coffee (x2), water, and supplements.

lunch was also eaten at my desk.

wiaw - lunch

i packed chicken salad, bean salad, and veggies with hummus.

yesterday afternoon was also significant because i went to the gym after work. normally, getting me to step foot in the gym after a whole day of work is darn near impossible. i am really making an effort to accomplish my january goal to go to the gym more days than i don’t, though. since i gave in to my snooze button too much before work, afterwards was my only choice.

it wasn’t so bad…

dinner tasted extra delicious thanks to my lack of preparation – i forgot a snack!

wiaw - dinner

i had salmon with lemon pepper and a little bit of tartar sauce, brussels sprouts with a sprinkle of garlic goals, and leftover carrots (from lunch) with more veggies and some greek yogurt dip.

we had some coffee left from the morning, so i finished that up with dinner.

i did have a little sweet tooth after i finished that, so i had a salted caramel dark chocolate square for dessert. i wanted to eat about 10 of them, but i resisted and chugged water instead.

yay me!

part of the reason that i’m really trying to focus on my diet and gym time right now is because i really need to lose some weight. if you’re a longtime reader, you can probably tell from recent photos that i’ve gained weight.

almost 20 pounds since our wedding, to be truthful.

i’m not happy with how i look and i finally reached my tipping point where i am doing something about it. it’s going to be tough, especially since brad and i will probably be eating different things on occasion when he’s not into what i’m having. will you guys keep me accountable?

Isn’t it amazing how great you feel when you just think ahead and have good food to eat?!?!

You and I are on the same page! I’ve gained about 7 pounds since May, almost 15 pounds since my wedding in Aug 2011, and I refuse to go back to my yearly physical weighing more. For what it’s worth, I think you look gorgeous as usual <3 But I can totally understand that there are goals you want to set for yourself and achieve yourself! I'll help you be accountable! I track everything in MFP. It's really the only thing that works, and working out every. single. day. Doing something vigorous for 30 minutes. You can do it! You've achieved so much in your life as it is, so I know you can do this! We can help each other :)

Hey Sarah! I just stumbled upon your blog, great to see a healthy living blog from Madison! I currently live here as well and we are close in age, so it is a little exciting! (Not sure how to say that without sounding creepy, but there it is).

I, too am trying to get back to a better diet after the holidays. Hopefully we can all get there. Good luck! :)

Preparation really is key! Although I tend to over-prep, to the point where my lunch box often looks like a buffet. Oops. :) [I will say it is usually super healthy, so it isn't a BAD thing. I just like choices...]

Good for you for resolving to make a change. I also think you have ‘set yourself up’ well for it, with small goals, like going to the gym more often. I pack my bag the night before, and since I have to drive by the gym on my way home, it is much harder to skip out. It might sound crazy, but I have gotten to a point where if I DON’T work out after school, I feel a lot of pent-up stress. It is like a good ‘detox from the day’ for me. [Sometimes I run, now, instead, but same idea.]

I really like the look of that bean salad! And that snack-pack of hummus is so cool. I didn’t even know they made something like that. What a good idea! It’s been FOREVER since I’ve had hummus. What’s wrong with me??
