wholesome harvest csa week 7 was another good one!

i was excited to see some new items in the box this week.

again, we didn’t get a ton of veggies, but i’ll take whatever fresh, local, organic produce i can get!

this week we had:

  • red lettuce
  • sweetheart cabbage
  • white onion
  • scallions
  • carrots
  • white bell pepper
  • italian eggplant
  • tomatoes

i didn’t have much energy to think up creative uses for the veggies this week. the lettuce will be used in salads, i roasted the eggplant and pepper with some other veggies, i sautéed the scallions with some ground chicken the other night, the onion will be used throughout the week, i washed the carrots and ate them with hummus, and we used the tomato on our loaded sweet potatoes the other night.

i’m not sure what i’ll do with the cabbage, but i’m thinking some sort of cabbage wrap. we’ll see…

I use cabbage for wraps or instead of about half the lettuce in a salad.

My mom makes an awesome cabbage curry! Since I don’t know her recipe, here are some similar-sounding and looking ones:

Or you could make what I want to try to make. There’s this awesome food cart in town that has “Tangy Thai Slaw” and it’s a cole slaw but with spices and a vinaigrette. It’s so good!

I recently made stuffed cabbage leaves – blanching some whole leaves and stuffing with a mixture of quinoa beans and saute onions. After rolling up the leaves and I put them in the bottom of a pan and simmered in a tomato sauce for about 30 minutes!
By the way, that aubergine (sorry, eggplant) looks awesome!
