week 4

by Sarah Zinkel on June 2, 2012

i didn’t think it was possible, but week 4 of our wholesome harvest csa left me even more obsessed than i already was.

wholesome harvest csa spring share week 4

the theme of this week’s box was greens!

look at them poking out of the box!

we received:

  • asparagus
  • bok choy (which they called chinese cabbage this week & bok choy previous weeks – silly!)
  • rhubarb chard (which just looks like rainbow chard to me!)
  • green leaf lettuce
  • red leaf lettuce
  • green saute mix (already bagged!)
  • lettuce mix (already bagged!)
  • purple kohlrabi (new!)
  • scallions

another seriously awesome haul!

and a bonus green –> spinach!

fresh spinach from the youth grow local farm

freshly picked at the garden on tuesday with the 4th & 5th graders! (an added perk of volunteering at a garden!)

all of those greens meant a lot of work for me though! i spent at least 30 minutes when i brought them all home washing and prepping them all so they’d be clean and ready to grab and go when i want a salad. i’ve lost too many veggies to wilting when i don’t prep them right away!

i already used the sauté greens and spinach in the quinoa salad i showed you on wednesday and some of the lettuce (i mixed it all together) in some monster salads!

i’m going to use the scallions in some of my three bean salad and i will either saute the bok choy and chard in garlic + onions or make a similar stir fry to the one i made last week with bok choy!

sadly, this was the last week of the spring greenhouse share of the csa.  the regular csa share won’t begin until two weeks from now. it’s a bummer to have to skip a week, but it all depends on how much food is ready to harvest in time.

***

have you called it chinese cabbage or bok choy?

i always call it bok choy, but apparently it goes by a lot of names –> chinese cabbage, bok choy, pak choi, chinese chard, chinese mustard, celery mustard, spoon cabbage. interesting!

No, I only signed up that one year. The options around here are so limited. The one that I had been getting was out of Denmark, and I ended up having to go the far side of Two Rivers each week to pick it up. It just wasn’t worth it. Such a bummer though!

I call it bok choy and it is seriously one of my new favorite things. I love it in stir fries! Enjoy your haul. :)

The three bean salad where you are going to use the scallions looks so good. Any chance you’ll ship some to me? ;)
