week 3 of wholesome harvest csa was pretty great.

this week’s box had lots of old favorites and 3 new things! rhubarb was left out of the mix for the first time this week though. :(

this week we got:

  • asparagus (i hope they keep this one up as long as possible!)
  • bok choy
  • green leaf lettuce
  • kohlrabi (new!)
  • lettuce mix (new!)
  • scallions
  • spinach (new!)
  • swiss chard

whew! lots of greens this week, huh?!

we’ve already cooked up the swiss chard and made a dent on the asparagus, lettuce, lettuce mix, and spinach!

i think i’m just going to slice the kohlrabi and eat them as a snack. i’m still not sure what the plans for this bok choy are – i kind of want to try something new!

this week’s produce is lasting a bit longer than last week. those greens really go far! i foresee a lot of salads in our meals.

Mmmm…every time you post your CSA pictures, it makes me wish I had gotten one! The veggies look so good! Whenever I cook bok choy, I just like to saute it wish some onions in a little bit of sesame oil!

What if you did a different take on cabbage rolls and used the bok choy? Create a filling of pork or tofu or something, and some asian flavors as a marinade or sauce, blanch the bok choy leaves, then fill, roll, and cook in a sauce of some sort on the stove or oven? Might be a fun take on it :)

You should also try making Korean bibimbop and use the kholrabi :)
