week 2 of wholesome harvest csa spring share and i am loving it!

week 2 of wholesome harvest csa spring share

this week we got some of the same things as last week and some new additions as well!

we got:

  • asparagus
  • green leaf lettuce
  • green oak leaf lettuce (new!)
  • leeks
  • rhubarb
  • scallions (new!)
  • swiss chard (new!)

i’ve already cooked up the leeks and chard and used the lettuce and scallions in a big salad (the same one i posted on monday – yum!).

the asparagus will be steamed or grilled with dinner tonight and the rhubarb is going to be made into a galette <-– ashley posted that recipe at the perfect time! :)

only thursday and our produce is almost gone. maybe we should have gotten a full share….

which veggies would you be most excited about this week?

asparagus wins again for me, which swiss chard being a close second!

Oh my goodness! How beautiful are those veggies! So colorful and bright :) I looooove any kind of swiss chard! Rainbow, green, whatevs! Leafy greens are a must. Never heard of green oak lettuce – very interesting! That asparagus is calling to me though. You and I are in a love triangle with asparagus lol. What are you going to do with the rhubarb? I’ve only ever seen it used in sweet desserts with strawberries (crumbles, pie, etc.)…what are your plans for it?

i am a huge fan of the green leafies as well! :) the first time i tried chard & kale was 3 years ago when i got my first csa. now i’m hooked!

i think i am going to make a sweet dessert with the rhubarb. that galette recipe i linked to is like a deconstructed or more rustic kind of pie. i’m going to make it with strawberries too. brad also requested a rhubarb crisp, so i might have to make a couple individual ones in my ramekins. we’ll see! i think i’ll do that tonight or tomorrow! i’m sure i’ll blog about what i do. :)

oh yeah, and i have made rhubarb jam/jelly and a rhubarb sauce before. both were also delicious options.

Rhubarb jelly/jam sounds AWESOME! Has rhubarb ever be made in a savory dish? I think it’s traditionally used in sweet dishes, right? Either way, I can’t wait to read about the yummyness you create from this!!

That swiss chard looks absolutely beautiful!!! I’m hoping to make some rhubarb jam in the very near future. I’ll let you know how it goes!
