another good wholesome harvest csa week!
it’s getting to the point where we’re seeing lots of second-plantings of veggies we were getting in spring –> bok choy, radishes…yay! but we’re also beginning to get some winter veggies too. it’s a perfect mix.
this week our box contained:
- lettuce mix
- kale (!!)
- red bok choy
- yellow bell pepper
- green bell pepper
- yukon gold potatoes
- sweet potatoes (!!)
- red turnips
- red radishes (they return…)
- acorn (?) squash
first of all, that “acorn” squash doesn’t look like any other acorn squash i’ve ever had. it’s hard to tell in the photos, but it kind of has weird bump sticking off of it on the bottom that it a much lighter color green… wishing i had taken a better photo of it.
but, i’m excited about mr. unidentified winter squash anyway.
this week’s plan: the yukon potatoes are going in our stash with the other potatoes we’ve received in the last few weeks. we’re still going through our last bag of store-bought potatoes!
i roasted the sweet potatoes in coconut oil and sea salt and they’re delicious.
the kale was immediately put in the over to make kale chips and then burned to a crisp. i need to just bust out my dehydrator next time i want kale chips. i fail every time i try using the oven. i just walk away for a minute or two too long. ughhhh…..
the peppers went into a frittata for dinner the other night and the radishes and kohlrabi are sliced in the fridge for snacking.
i’m planning to make something with the bok choy and some tofu for dinner tonight.
and that should take care of most of it!
were you able to get any second plantings in this year?
we definitely didn’t. our garden is still a disaster zone, otherwise i would have loved planting something immediate upon moving in!
