happy valentine’s day!
brad and i don’t go overboard with valentine’s day, but we’re especially not doing much this year because i got my camera for christmas/my birthday/all other gift-giving holidays this year and brad got his new car this weekend!
since we’re not giving gifts, i’ve been having fun creating some cute valentine’s-themed food for the past couple days!
how perfect to start off valentine’s day with a short (or tall) stack of whole wheat pancakes with strawberries?!

or a vanilla cupcake with strawberry buttercream frosting?
i made these guys on friday night and frosted them saturday morning.
i used strawberries that we picked this summer and then i washed and froze to enjoy during the winter!
i thawed them and added some of the juice to the frosting to make it extra pink.
yum. i want to eat another.

and finally, the best for last!
when i went to trader joe’s on sunday, i was tempted by the fat-free brownie mix and the mini peanut butter cups. so i had to put them together immediately.
i just mixed up the batter according to the directions and mixed in some mini peanut butter cups. i used a 9×9 pan instead of 8×8 because that’s all i had and decreased the baking time to accommodate the thinner brownies.
i also like my brownies a little under-baked, and these came out perfectly!

also, i just wanted to share that cassie is having a raffle on her site to raise money for breast cancer research.
some of my loved ones and those of many close friends have battled breast cancer and it’s a cause i am proud to support. check out this page for all of the info.

are you celebrating valentine’s day today?
we’re going for a romantic night away in a couple weeks as our actual valentine’s celebration and brad did get me a rose at dinner on saturday night (the restaurant had a special where if you bought a certain kind of beer, you got a rose, so brad ordered that beer to get me my flower…!).

ughhhh, the cupcakes. they’ve been calling my name from the fridge all week. i’ve only eaten one so far, but brad better hurry up and finish them! good thing i made a small batch.
Those cupcakes and pancakes are gorgeous… but the thought to brownies and reeses make me salivate. I wish I was at your house for Valentines!.

Sarah, all your yummies look awesome! I love all the pink. I have to tell you, when I read that you like your brownies a little underbaked (me too!) it immediately made me think of the first time we made a brownie mix together at your house, probably in 7th grade. I was SO horrified that you were sure we were supposed to bake them for the exact length of time on the box! You’ve come a long way my friend

oh my gosh, katie. i had no idea how to cook and i was very big on following the directions. i don’t remember baking brownies with you, but i do 100% believe that i wanted to follow the directions.

i am soooooo not a baker. i don’t know where the urge to bake came from, but i just went with it. i can’t make things up as i go when i bake, which is why i like cooking so so so much better!

this was my first time making buttercream and i think i let the butter get too soft or maybe i shouldn’t have added so much strawberry juice (or both), but it was definitely too runny. i guess that means i’ll just have to try again sometime soon!
All those treats look so yummy and pretty!! REB and I don’t exchange gifts for V-Day either. But tonight we are having brinner (breakfast for dinner). I’m making red velvet chocolate chip pancakes and he’s making an egg scramble with veggies and tempeh. Shold be delicious. Of COURSE I’ll post pics and a blog about it!!
