happy leap day, friends!
are you doing anything out of the ordinary to celebrate this once-every-four-years occasion? some of my friends from my phd program are planning a happy hour tonight, but other than that, i think it’ll be a pretty normal day. and that’s ok with me!
so, just like any other wednesday around here, i’ve got a what i ate wednesday post coming at ya. thanks to jenn for hosting this link party every week – i love reading everyone’s posts!

breakfast:
i made hot oats with a dollop of cinnamon almond butter on top and lots of very cherry berry blend hiding underneath. this batch of oats had extra chia seeds in it too – i accidently dumped twice as much in as i usually use. look at all those little seeds! a big mug or two of black coffee rounded out the meal.
lunch:
i made some crazy spicy and veggie filled soup this weekend, so i had to try out a bowl for lunch! it had cauliflower, onion, garlic, jalapenos, bell peppers (green & red), black beans, corn, and great northern beans in it. whew! there is a lot of nutrition packed into that soup. and it’s delicious on top of it! that’s a winner in my book. ![]()
dinner:
here’s where the snackity-snacking comes in. dinner wasn’t really one meal so much as it was a collection of snack attacks. i ate the luna bar around 4pm when i started to get hungry. then, i wasn’t hungry at 6ish for my normal dinner time. but when 7:30 rolled around, i was ready to get some food into my belly so i made this chobani + unsweetened vanilla almond milk + fruit & nut flavored bear naked granola mix and then i juiced some apples, an orange, and some carrots for this juice (2x the amount shown – it didn’t even come close to all fitting in that glass!).
it ended up being a surprisingly satisfying dinner. i liked having so many different parts to it.

how was your life different from now on the last leap day (february 2008)?
in february 2008, i was a senior in college and living in st. louis. i wasn’t even dating brad yet!
and thanks go the amazingness of google calendar, i just went way back into my archives to find that i was actually in madison on february 29, 2008 interviewing for my phd program! so cool and so random.
i spent the day being toured around the snowy campus by a student in the program and met with 6 or 7 faculty members in my department. i was so so so terrified & nervous.
my life is so different now!
