so predictable

i think i’ve got a slight obsession with mexican-inspired food.

and mac & cheese.

if you look at the starred posts in my google reader, about 2/3 of the recipes are mexican foods, 2/3 are variations on mac & cheese, and the rest are a mixture of all other kinds of food out there.

so i guess it should be no surprise that when i saw janetha post this green enchilada pie, i immediately starred it and made it a week later!

i loved this recipe! it was really easy to make with minimal prep. plus, i got almost all of the ingredients at heaven on earth trader joe’s!

including this roasted corn, which i’ve seen before, but never tried. i like it! good thing i had a feeling i’d be a fan, and bought two bags!

you can see the original recipe on janetha’s blog, but it was pretty simple to execute.

layer tortilla in round pan (i used a springform baking pan…).

add meat.

add sauce.

brad was a fan of this one too. i’m excited to do a similar enchilada pie style with different fillings – i’m thinking portobellos, bell peppers, onions, etc. yum!

we ate dinner together last night and then brad played a game on his ps3 while i watched glee! we finally decided to reactivate netflix for the instant streaming so i started with episode 1 last night. it’s so cheesy, but i love that show!

computer monitor

i think getting this computer monitor upgrade definitely helped with that decision! it was like we had two tv’s last night. i loved it!

*and yes, i really want to do something about our computer/guest room decor. it’s sad. i’ll get on that….

today i’m working from home in the morning and then volunteering at the garden this afternoon! plus, brad and i must get started on our wedding thank you’s… i am not excited about writing them.

what’s one recipe you have in your queue to make next?

maybe someone’s will sound so good that i’ll make something other than mexican or mac & cheese tonight! Winking smile just kidding…tonight is turkey burgers!

i am waiting for the perfect time to make ashley’s cake batter cashew butter, jessica’s cheesy pull apart puff bread, or gina’s spinach & cheese stuffed portobello mushrooms!

Isn’t that roasted corn amazing? I’m down to only about a 1/4 of a bag left in the freezer. Need to get to TJ’s ASAP!

I am so jealous of your trader joe’s roasted corn! I love that stuff but sadly the closest TJ’s is a mere 6 hour drive…not far right? That recipe looks awesome though!

We would starve without Trader Joe’s (well, not starve, but not enjoy going to the grocery store as much). I’d add that Mexican casserole to my list of things to try. Daniel isn’t a big casserole guy, but he does like anything “enchilada-ish”.
