good morning! i am running a little late right now (darn you, snooze button!), so let’s keep this what i ate wednesday short & sweet, ok?!

as is becoming my routine, i started my day with coffee and computer time.
a little while later, i assembled breakfast: an apple with homemade cinnamon almond butter.
a couple hours later, it was snack time! i had a banana with homemade cinnamon almond butter + my handful of supplements.
i wanted to eat lunch with brad when he got home, so i wasn’t very hungry thanks to my snack. i kept things small and simple with baked lentil chips + a new-to-me trader joe’s find: spicy black bean dip & two hard boiled eggs on the side.
then i worked for like 7 more hours and finally came up for air to realize i had to go to the grocery store & i was hungry! i got this string cheese as am impulse buy at the supermarket, so i had a piece before starting on dinner.
dinner was one of our easy fall-backs since it was getting so late: nachos! corn tortilla rounds with sloppy joe meat, chopped spinach, green bell pepper, black olives, onion, cheese, salsa, and sour cream.
i could eat those nachos every night!
after my long day of work, ice cream was necessary! i had a little bowl of cedar crest cookie dough ice cream.
it was no blue moon, but it hit the spot!
and that’s that!

what meal could you eat over and over again?
nachos are a popular one around here! so are smorgasbord meals where we just pull stuff from the fridge and make a little buffet-style plate. i definitely need to get back on the food prep on the weekends + meal planning train, though!

I could eat pancakes all day every day right now. Or my carrot cake protein batter. I’m in a rut… good thing it’s a tasty rut. LOL!

Cinnamon almond butter FTW!!!! I have never thought about that on apples, I eat mine with honey! So yummy!
