seven things sunday–glorious veggies edition

thanks for all of your “feel better” comments yesterday. i’m definitely feeling better today than i was yesterday – hooray for small victories!

i didn’t want to leave you hanging on seven things sunday this weekend, since i totally skipped it last week, so here’s a veggie-themed seven thing sunday featuring some glorious, organic, local, fresh, veggies i’ve been loving lately!

first up are some recent farmers market finds.

1. these little cucumbers. i know they’re pickling cucumbers because they’re so little, but i like to eat them plain!

the really light/white ones are my favorites.

2. baby patty pan squash!

really, i just bought these because they’re adorable. they’d really good roasted or steamed as a side dish.

3. multi-colored carrots!

again, i pretty much bought these because they look awesome.

4. corn on the cob!

i got seven cobs for only $3! not bad.

5. now, moving on to our little porch garden. i needed to do some harvesting! mr. basil was getting a little bit ridiculous, so i made a huge harvest.

we used part for a delicious lunch (number 7 below) and the rest made a batch of fresh pesto!

6. there were also a bunch of cherry tomatoes ready to pick! the ones i planted are called sunsugar tomatoes. they don’t turn red- just orange, and they’re like candy.

there were some that weren’t quite ready to come off the vine, so i’ll have another harvest soon!

7. lastly, something i’ve been dreaming about since i planted my basil & tomatoes – a caprese salad!

this is literally as easy as it gets. start with a bed of spinach, add fresh mozzarella, tomatoes (our sunsugar tomatoes plus a csa tomato sliced up), fresh basil (just ripped up a bunch of leaves). then drizzle with evoo, balsamic, and a sprinkle of salt & pepper.

so so so tasty.

and seriously, compared to the regular tomatoes, those sunsugars are so so so sweet! i never had such a sweet tomato before.

.. this made me miss last summer.. :( I loved all our fresh veg and really fun times at the garden.

I bought some chard and kohl rabi (purple!) At the farmers market last week – there are photos of them on my blog. Id never had either before, but I’m loving the chard simply blanched but will be sure to try it raw in salad. I’m still waiting for the kohl rabi to inspire me :-)

That bowl of homegrown Basil looks like heaven. Can’t wait till I get a place with a yard one day!

I would LOVE some purple carrots, they are GORGEOUS and would look great cut up matchstick style in a salad or stir-fry.
