served with a side of research

good morning everyone!

sheesh. i can’t remember the last time i took two days off from blogging! it was much needed though. i’ve been working my butt off to try to be as prepared as possible for my big presentation tomorrow.

right now, it’s the anticipation/nerves that are really getting to me. i’m torn between wishing i had even more time to prepare, and just wanting to get it over with. anyone else ever feel that way with big projects or presentations?

anyway, i couldn’t skip one of jenn’s fabulous what i ate wednesday link parties – it’s one of my favorite posts to write each week!

here is what i ate last week wednesday – vegged up, of course!

breakfast was light on the veggies as usual (unless i have a green monster).

lunch totally made up for the lack of green in my breakfast, though.

vegetable salad

i had a huge salad with spinach as the base and sauteed zucchini and mushrooms on top. i drizzled a little balsamic vinaigrette on top and savored every bite!

my afternoon snack also packed a major vegetable punch.

fresh juice - carrots, cucumber, ginger, strawberries, orange

this fresh juice had carrots, celery, a cucumber, ginger, strawberries, and an orange.

served with a side of my daily vitamins – i started taking a couple new supplements recently, so my handful of vitamins is getting bigger!

[oh yeah, and as you can see, all of these meals were served with a side of piles and piles of journal articles that i was using for research for my presentation…]

dinner was one of my favorite meals that i’ve made recently. (not difficult since i haven’t been very ambitious in the kitchen for the past week…).

i loved these tomato basil quinoa cups from heather’s dish. i definitely went back for more than two!

and then finally, i added in a couple more servings of produce in the form of fruit with his & hers cherry banana softserve.

i’ve been craving ice cream so much lately, and banana softserve and frozen chobani’s have been my go-to’s to tame that craving!

and with that, another what i ate wednesday is completed!

today involves practicing my presentation about a million times, a last meeting with my advisor to go over my slides, and a seminar.

also, my mom and stepdad are arriving in town tonight. they’re coming to see my presentation tomorrow and then hanging out in madison until saturday. i can’t wait! it’s going to be so much fun (once my seminar is over, that is…).

i usually like roasted veggies better, but when i’m short on time, sauteed works and is definitely still delicious!
