wait. what is this?

a recipe?

it’s been a while, hasn’t it friends?

don’t let my lack of recipe posting fool you. i have been cooking lately! it’s just that most of the things have been more like “throw in a little of this, a little of that, maybe some shakes of whatever….” and not real recipe development.

but these potatoes.

i’ve had them in my head for a couple weeks now. i attempted them last week, but used the magic bullet to mash them and the result was not so great.

this version, mashed with the food processor, is much better.

rosemary and goat cheese mashed sweet potatoes

since we’ve been eating grain-free, sweet potatoes have become a major staple in our diets. i’ve been making them stuffed with just about anything you can think of! i guess mashing them is just the next step in our sweet potato obsession.

i won’t stop until i’m orange.

rosemary and goat cheese mashed sweet potatoes

Prep Time: 2 minutes

Cook Time: 5 minutes

Keywords: side vegetarian gluten-free sweet potato goat cheese greek yogurt fall winter

ingredients (4, 1/2 cup servings)

  • 2 sweet potatoes
  • 2 oz goat cheese
  • 1/2 cup plain 2% greek yogurt (i used chobani – my favorite!) + 2 tbsp for topping
  • 1 tbsp dried rosemary


wash and peel sweet potatoes

stab each potato with a fork several times and wrap in damp paper towel

microwave potatoes for 4 minutes – until soft

cut potatoes into large pieces and add to food processor

add the rest of the ingredients to the food processor

pulse until desired consistency is reached

serve with plain yogurt

i ended up eating half of this as my entire dinner last night! it’s so good.

i love rosemary and the hint of goat cheese just put these over the top for me.

i am a fan!

up next? garlic mashed sweet potatoes. i can’t wait!


what is your favorite way to eat potatoes?

we love sweet potatoes. they’re kind of carb-y, which doesn’t make me miss grains quite so much. i don’t think i can pick a favorite way to enjoy them though. i like them as fries, stuffed, and now, mashed!

Ok seriously, you just made me have the hugest craving for these! Good thing my kitchen is stocked with sweet potatoes, and we have fresh rosemary in our herb garden. Wow that’s a really interesting combination. I’m always looking for an excuse to use goat cheese so I’m definitely trying this!

I just recently developed a love of goat cheese and I’ve ALWAYS loved sweet potatoes so I Think this needs to happen in my life haha

I’ve never heard of anything like this. Nor have I ever tasted goat cheese before. I’ve been looking for different ways to eat sweet potatoes – we’re stuck in our ways of sweet potato casserole and stuffed sweet potato skins. :)
