wait. what is this?
it’s been a while, hasn’t it friends?
don’t let my lack of recipe posting fool you. i have been cooking lately! it’s just that most of the things have been more like “throw in a little of this, a little of that, maybe some shakes of whatever….” and not real recipe development.
but these potatoes.
i’ve had them in my head for a couple weeks now. i attempted them last week, but used the magic bullet to mash them and the result was not so great.
this version, mashed with the food processor, is much better.
since we’ve been eating grain-free, sweet potatoes have become a major staple in our diets. i’ve been making them stuffed with just about anything you can think of! i guess mashing them is just the next step in our sweet potato obsession.
i won’t stop until i’m orange.

what is your favorite way to eat potatoes?
we love sweet potatoes. they’re kind of carb-y, which doesn’t make me miss grains quite so much. i don’t think i can pick a favorite way to enjoy them though. i like them as fries, stuffed, and now, mashed!Pin It
