pumpkin paradise

so, i was going to make this post “day in the life” style. but then 1pm rolled around and i forgot to take anything but food photos.

oops.

it’s ok.

we’ll do what i ate wednesday style instead!

my morning started out bright dark and early with a big mug of pumpkin spice coffee.

a few hours later, it was breakfast + pumpkin rooibos tea time!

breakfast - fruit, peanut butter, tea

i had a banana and an apple – both with cinnamon raisin swirl peanut butter with trader joe’s pumpkin tea on the side.

lunch was a sweet potato (cooked in the microwave) and topped with cowboy caviar.

my mom gave me the recipe for the cowboy caviar last weekend and i made it right away. the recipe called for sour cream and mayo, but i used greek yogurt for the dressing instead. it turned out perfectly!

i ran a couple errands in the afternoon and grabbed my first pumpkin spiced latte of the season with my free drink coupon.

i ordered it with one less pump of syrup than usual and it was perfect! yum.

i also had about 3 more mugs of tea throughout the afternoon.

and then dinner was my old-school go-to dinner.

dinner - tofu and veggie bowl

i literally ate this 4-5 nights a week during my first year of grad school.

it’s just extra firm tofu, sautéed in a pan with mixed frozen veggies, minced garlic, and some general tso’s sauce from trader joe’s.

now, regarding this month’s what i ate wednesday theme: spooky snacks & healthy halloween treats – i whipped up some of the twins’ healthy pumpkin pie fudge and had a little square for dinner. yum. and very seasonally appropriate! too bad i didn’t take a photo…

i love my pumpkin coffee drinks. i just picked up pumpkin spice coffee and tea at trader joe’s this week!

My favorite seasonal treat has to be pumpkin (or butternut squash) anything. Or peppermint when the holidays roll around ;)

A bit random – but, wow, whoever wrote your name on your cup has beautiful handwriting!

I’ve been on a cinnamon in anything kick. I like pumpkin, don’t get me wrong. I had a pumpkin spice frapaccino over the weekend and it was pretty fantastic.

I love pumpkin flavored drinks! I even put some pumpkin spice in my coffee beans before I grind them in my coffe maker at home :)

yes, i picked up 5 of them on super-clearance at pier 1. i fell in love with them & they match my fiestaware colors perfectly!

i haven’t posted the cowboy caviar recipe before. i’ll work on posting it soon, ok?

I saw that Pumpkin tea at Trader Joe’s and almost bought it after my near meltdown in the aisles over the massive shortage of pumpkin spice coffee. However, I only really drink tea at night, and I couldn’t figure out if it was caffeine free or not. Now, I could be stupid and all rooibis tea could be decaf but I wasn’t sure..it probably says blatantly on the package but the tears in my eyes over the coffee situation might have blinded me.

I might be being a little overdramatic.

MIGHT be.

i just picked up some of the pumpkin spice coffee at trader joe’s. our store didn’t look like there is a shortage! there was so much. maybe i should have stocked up…?!

Free drinks at Starbucks make it an instantly great day! I need to remember to order sweet drinks with 1 less pump. They’re always sooo sweet!

Looks like a cozy day with lots of coffee and tea! (Those are the best days).

seriously. i get so excited every time i earn a free drink! :) and yes. i ALWAYS order drinks with less syrup than usual. even then they’re sometimes a little sweet for me.

the coffee + tea definitely made a day of dissertation work cozier. :)

after seeing this comment this morning, i decided to re-make the sweet potato + cowboy caviar for lunch again today! i added in some diced avocado and it took it up like 3 levels. sooooo good!
