pesto + asiago + spinach

thanks to everyone who offered words of advice or support yesterday in response to my grad school blues. i know i need to just keep on plugging away at everything. it just got to the point of being very overwhelming yesterday.

anyway, i’m here to tell you about a delicious dinner i made the other night!

i used to be really intimidated by the thought of stuffing chicken breasts. it sounded a little fancy and way too difficult for my novice cooking skills. but then, i saw janetha post a recipe that included stuffed chicken, and it didn’t look so difficult after all.

since then, i’ve made a couple different varieties of stuffed chicken.

this most recent one is my favorite though…

i’m not going to write out the whole method here – janetha’s post did a good job of that.

basically you cut a chicken breast in half, but not all the way through to create a chicken butterfly. then pile on your fillings, close with toothpicks, season with salt & pepper, sear, and bake.

for the stuffing:

  • spread 3 tbsp pesto in the chicken breast
  • add a slice or two of your favorite cheese – i used some wonderful local rosemary & olive oil asiago cheese (just use regular asiago + some fresh rosemary sprigs for the same effect!)
  • finish by adding as much fresh spinach as you can fit!

during dinner, brad said he could eat this meal every single week. so yeah, this meal was a hit!

i’m doing a little rain dance over here – the skies look threatening and we need some rain. i can’t even remember the last time we got even a drop and you can definitely tell. all of the grass is brown, the poor farmers’ crops are suffering, and there’s even a burn ban in our area because it’s so dry!

come on, rain!

what’s something you’ve always been intimidated to cook?

meat in general is often a struggle for me. i am always so worried that it won’t be fully cooked and that freaks me out!

Mmm! If I ate meat, I KNOW I’d love this. I love the combo of spinach and pesto! But this could easily be stuffed into a portabella mushroom or something! I used to be scared to cook risotto. The whole process seemed scary, but now it’s a cinch! Just time consuming :P

My firs thought was also ‘how can I vegetarian-ize this’? I think I may try using that stuffing in bell peppers!

I LOVE pesto with asiago. Walnut pesto is also a favorite… I really need to try making it at home. I am pretty much terrified of working with chicken in general though… maybe something for me to try (or I could make husband do it.)

Also hope you guys get some rain soon!

I love cooking stuffed chicken breasts! I will definitely have to try it with pesto sauce :-) That’s my favorite. There’s not too much that I’m intimidated to cook. Lasagna kind of scares me…it seems like a lot of work! haha!
