harvest grains salad

i really like to prep one or two simple side dishes each weekend that are easy to pack up and bring in my lunches throughout the week. my three bean salad and sun-dried tomato and farro salad are two of my favorites.

Prep Time: 10 minutes

Cook Time: 10 minutes

ingredients (6, 1/2 cup servings)

  • 3 cups cooked trader joe’s harvest grain blend (1 1/4 cup dry) or grain of choice
  • 4 oz sun dried tomatoes
  • 4 oz sliced black olives
  • 1/2 medium red onion, chopped
  • 2 oz crumbled feta cheese
  • 2 tbsp olive oil (i used garlic infused oil)
  • salt and pepper to taste

instructions

cook grains and chop onions

allow grains to cool and toss with the rest of the ingredients

refrigerate for at least 2 hours (overnight is better) to allow flavors to intensify

this might be my new favorite salad. i think i’ve eaten it every day since i made it.

i know it’s a pretty traditional flavor combination, but i like traditions!

also, this is how i store grains like this once i open the bag…

i pour whatever isn’t used into a ball jar, cut out the cooking directions and put them inside the jar or tape them to the outside. then i cut out the label so i know what’s in the jar and place it over the top and use the ring to screw it on.

it’s so simple! i like this way because it’s not permanent. so if i use up these grains and then don’t but them again for a while, i won’t have an empty container permanently labeled “harvest grains” sitting around waiting for me to fill it. because sometimes you have a lot of other grains to use up before you get more (i know you know what i’m talking about… raise your hand if you have a grain collection in your pantry.).

anyway, if you have 20 extra minutes in the kitchen (this is easy enough to do while you’re cooking dinner), i urge you to try this salad.

do you bring lunches from home or do you buy your lunch?

i always pack my lunches, but brad is super lucky and has time to come home every day for his lunch hour and eat at home. i’d enjoy not having to worry about packing my lunches the night before. it doesn’t take long, but it seems like a hassle sometimes.

I’ve only been working in an office for about two weeks. So far, I’ve gone out almost every day. I need to start bringing my lunches next week, and I’m adding this to the list. Going to check the other two you linked to as well.

bringing lunches saves me so so so much money! i can definitely see how it would take a bit of time to get into the swing of things with being new to working in an office. one thing about bringing my lunch: i like to go somewhere other than my desk to eat it. otherwise i end up working through my lunch and i definitely NEED to take a break!

Oh my – this sounds yummy! I’m definitely going to have to give it a try!
And, that Harvest Grains Blend looks awesome! I normally don’t venture over near our Trader Joe’s but I may have to make a trip….

it’s a bit of a trip for us to go to our trader joe’s – about a half hour drive – but i still go fairly often. i just have so many favorites from there that i can’t give up! this harvest grains blend was a new item this time, but i really like it!

i definitely notice that my meals can become non-existent and get replaced by snacks over the course of the day when i work from home and it’s so easy to visit the fridge. i try to stick to my normal schedule though, especially when i notice that i’m going to the fridge out of habit or boredom or just because it’s there.

I love that blend from TJ’s – so good!
This salad looks amazing and it is now “starred” in my Google Reader. I’m always looking for great recipes to have for lunch (especially ones that are easy!). LOVE the addition of feta – can’t get enough of its saltiness. :)

When REB and I both worked in Ann Arbor (he works a bit further away now), we used to meet each other at home for lunch, eat lunch and walk Gryff together :) At that same job, I lived a mile from the office, so I’d still come home once he got his new job. Now that I work downtown and take the bus, there isn’t enough time for me to go home :( But I pack a lunch every single day! Saves money, is healthier and delicious!
I’ll have to add this salad to my list of things to make one day. Sounds protein- and fiberlicious!

i wish it was easier for me to come home in the middle of the day. i have a really long commute though, so that’s not possible. i fully take advantage of my ability to work from home though!! :)

and hooray for making lunches – i can’t imagine buying every day. i think i can probably count the number of times i’ve purchased lunch in the past year. i hardly ever do it.

hooray (or i guess not?) for another grain hoarder! i have 2 kinds of couscous, i don’t know how many types of rice, wheat berries, farro, millet, quinoa, and i’m sure more that i need to use before buying any. more. grains!

I am lucky in that most of the time I eat lunch at home. But there are days when I am working at the store that I bring along snacks. This salad would be a great bring-along snack!

Mmmm… I adore that TJ mix. I also store all my dried beans and grains in the largest Ball Mason Jars. I love how they look on the shelves. :) Thanks for sharing and linking up at Mamavation.
