grain-free pizza experiment

since brad and i have been avoiding grains in our diet, we’ve been missing some of our traditionally grain-containing favorite foods. one of the big ones for us is pizza. we used to grab a papa murphy’s veggie pizza for busy evenings and would even order the occasional delivery pizza if we were feeling especially lazy.

brad mentioned this idea he heard for making a pizza with a ground beef “crust”. at first i dismissed it because, honestly, it didn’t sound that appealing to me. but then the pizza craving hit this week and i picked up a pound of high quality ground beef and decided to give it a try.

i don’t really have a recipe for this & i definitely have some changes i’ll try next time, but here’s a general run-down: i browned the beef and mixed it with some mozzarella cheese. then i just formed a circle on our pizza stone with that mixture and called it the “crust”.

from there, i just built a pizza as i normally would: sauce, cheese, tons of veggies. i added chopped onion, bell pepper, jalapeño, black olives, cherry tomatoes, mushrooms, and pepperoni.

i baked it for 20 minutes until everything was warm and the cheese was melted.

then i pondered how on earth to cut this! the crust definitely didn’t hold together well at all, so a fork was necessary to eat it.

in the end i just sliced pieces with my spatula and scooped it over to my plate!

and it turned into a big pile of mess. hah! that’s ok though. it definitely took care of my pizza craving since all of those toppings really made it taste like pizza.*

*side note: one of my pet peeves is when bloggers try to make one food item sound like another when they are really very different. i will admit, this is not pizza. you can’t pick up a slice and eat it with your hands. there is no real crust. but, with those great toppings, it did taste like pizza and took care of my craving.

as i said before, i’ve got plans to try this again with some tweaks to the “crust”. i’ll let you know how it goes!

we had some crazy storms here last night! so much thunder, lightning, rain, and wind! the puppies were not loving it. poor capone was crawling into our laps all night and he’s still being a little needy this morning. thankfully, we don’t have any damage. just a couple of patio chairs tipped over!

i’ve got a full day planned. lots of work to get done, some cleaning, and taking these crazy dogs for a long walk since they were stuck inside last night.

i’m so happy that it’s already wednesday! i love short work weeks…

what’s your favorite pizza topping?

i always love black olives on my pizza! oh yeah, and cheese. you can’t have pizza without cheese!

This sounds really delicious!! A meat crust?? I am sure my husband would approve!
My favorite was to make a noodle-less lasagna is using eggplant slices as the noodles…it works great in the crock pot!

How is the grain free experiment going?

I love basil on pizza. My all time favorite pizza is a carb bonanza – Baked Potato Pizza at Pizza Luce in Minneapolis. Sooo good!

MMM I just love love love pizza. SO much. Have you tried a cauliflower pizza crust? I’ve seen it all over with paleo stuff (I think?) on Pinterest… it’s another good way to do a crust without grains. But I haven’t tried it so I don’t know for sure!

The storms were crazy last night! I live in Verona and they actually didn’t seem too crazy but my brother said that downtown the traffic lights on University were out. And my cousins in Oregon said they had lots of hail! Thankfully no damage though. I just found your blog and I am loving that you are from Madison!

I have to say, this sounds like too much meat for me… Love the creativity though! My favorite pizza toppings are black and green olives, and roasted red peppers.

Your pizza looks great. :) We have done noodle-less lasagna a few times. We love using long, thin slices of squash and eggplants. Yum! :)
