yesterday morning was glorious. i had a new attitude and i FINALLY finished that massive can of pumpkin i opened so that meant that my favorite breakfast was back!
overnight oats with mashed banana mixed in and frozen blueberries on top! another reason i was so pumped about this breakfast was the addition of a long lost friend. can you see them in there??? wheat berries! courtney wrote about wheat berries on monday and it made me realize how long it’s been since i made them to go in my breakfasts. so i whipped up a batch monday night! i don’t know if it was the wheat berries, the fact that i wasn’t eating pumpkin oats, or the new hemp milk from trader joe’s that i tried for the first time, but that breakfast hit the spot!
i don’t know what came over me last night, but i got a sudden urge to cook. don’t get me wrong, i like cooking, but i usually wait until i’m finished with my previous round of leftovers, before i start whipping up new things. not last night! i made three different things last night – two following recipes from other blogs and one random concoction that i threw together!
black bean burgers

- i can black beans, rinsed and drained
- 1/3 cup red onion, chopped
- 1/2 cup rolled oats, ground finely (i used a magic bullet once and a coffee grinder another time)
- 1/2 t salt
- 1 T worchestershire sauce (last time i made homemade vegan worchestershire, but this time i just used the conventional stuff i had in my refrigerator)
- 2 t cumin
- 1 1/2 t minced garlic
the original recipe calls for chopped mushrooms too. i’m sure that would be delicious, but mushrooms don’t last long in my house, and i haven’t had any either time i made these burgers!
you just mash up the beans, add the rest of the ingredients and mix well. then form into 4 patties. i just fried them in a skillet sprayed with cooking oil until both sides were browned and the burgers were warm all the way through.
i ate them burger salad-style!
just cut up a patty and serve it on a bed of spinach, a chopped hard-boiled egg, and with ketchup and mustard. tastes like a burger and it’s perfect for when you’re out of bread.
i have 3 patties for leftovers to enjoy the rest of the week!
the second recipe i followed was inspired by courtney again! i guess her food is looking good to me this week.
she posted a recipe for doughy cookie balls on monday, and i KNEW i had to make it! i made a special trip to the supermarket last night to get chocolate chips and then got to work.
doughy cookie balls
recipe from: bran appetit
- 1/2 cup butter, softened
- 3/4 cup powdered sugar
- 3/4 cup brown sugar
- 3/4 cup peanut butter ( i used crunchy because that’s all i had)
- 1 t vanilla
- 1 t baking powder
- 1/2 t baking soda
- 1/2 t salt
- 1 1/2 cups all purpose flour
- 1 cup chocolate chips (i used milk chocolate!)
i changed a couple things from the original recipe based on what i had. the original recipe called for almond butter and white whole wheat flour – but i used what i had. i also reduced the amount of salt slightly and added 1 cup of chocolate chips instead of 1/2 a cup!
cream together the sugars and the butter, then beat in the peanut butter and vanilla. add baking powder, baking soda, and salt and beat well. slowly beat in flour. fold in chocolate chips.
[at this point, my dough was very crumbly and did not form a big ball of cohesive dough, but i just went with it.]
refrigerate dough for 30-60 minutes. preheat oven to 350°. scoop out dough one tablespoon at a time and form into balls. even though the dough was crumbly in the bowl, it formed into balls perfectly!
place on cookie sheet about 2 inches apart. bake for 12 minutes. allow to cool for a couple minutes and then transfer to cooling rack.
and of course do a taste test!
these are SO GOOD! i might have eaten more than 3 last night (and no, i won’t tell you how many more than 3!).
and i’m going to wait to share the other thing i made last night since i haven’t been able to properly taste test it yet!
