my favorite brussels sprouts

brussels sprouts are one of those vegetables that elicits polarized responses from people.

i don’t know many (any?) people who kinda sorta like them.

in my experience, it’s love or hate.

maybe i can turn some of you haters into lovers with this cooking method.

i know it looks ridiculously simple, but that’s the beauty of it!

you like sweet chocolate or caramel with sea salt, right? well how about sweet brussels sprouts with sea salt?

the best roasted brussels sprouts ever!

sweet and salty roasted brussels sprouts

ingredients

  • 1 lb brussels sprouts
  • 2 tbsp coconut oil
  • 1 tsp sea salt (or to taste)

method

  • preheat oven to 400*
  • wash brussels sprouts and cut in half
  • toss in large covered bowl with coconut oil until coated well
  • spread into single layer on jelly roll pan
  • sprinkle sea salt over sprouts
  • roast for 30-40 minutes, flipping once, halfway through cooking

these are the perfect vegetable complement to so many meals!

i definitely enjoyed them with our soup on monday night.

it’s friday! i’ve got a lot to do today and i’m hoping i can manage to get it all done. i’ve been feeling extra overwhelmed and a little run-down lately, so i need to pull it together!

we don’t have any exciting plans for friday night other than enjoying the chili that i’ve got all set to start cooking in the crock pot this morning. tomorrow we’re heading up to manitowoc for the night to see friends and family though.
