caramelized onion hummus

i really wish i was one of those people who could learn to love monday mornings… i’m so not there yet! maybe someday… i’ll try to work on it!

anyway, i had a pretty great weekend, which makes this monday even harder than normal.

but, i have a recipe to share with you today that i really like, so i guess that makes it a little bit better.

i’ve been slightly obsessed with caramelized onions lately. i’ve loved them on pizza, on burgers, and in the form of dip.

so i guess it’s natural that my next inclination was to make them into hummus!

this recipe comes together in no time, especially if you make a batch of caramelized onions ahead of time and can just toss them into the food processor with the rest of the ingredients!

caramelized onion hummus

Prep Time: 45 minutes

ingredients (3 cups of hummus)

for the onions
  • 2 sweet onions
  • 1 tbsp cooking oil
  • salt

for the hummus

  • 1 15-oz. can garbanzo beans
  • 2 tbsp tahini
  • 2 tbsp lemon juice
  • 1 tsp dijon mustard
  • 1 tsp honey
  • 1 tsp apple cider vinegar
  • salt – to taste
  • extra virgin olive oil – as needed

instructions

caramelize the onions ahead of time and allow to cool

combine garbanzo beans, onions, tahini, lemon juice, mustard, honey, and apple cider vinegar in food processor

process until desired hummus consistency is reached

if hummus is too dry, drizzle in olive oil slowly until you reach the desired consistency

flavor with salt to taste

i really enjoyed this hummus with my sweet potato chips, but any fresh veggies, pita, or chips would work!

this week is “spring break”, which really means nothing for graduate students except that we don’t have any classes/seminars/undergrads around to distract us from our work…

so there is no excuse to not accomplish a lot!

did you ever go on spring break?

i did once in undergrad – my senior year i went down to florida with two of my friends. it was really fun but not in a wild & crazy way…

I am with you on the Monday morning blues. I actually just thought I’d better go workout and see if that will get me in the right mindset.

That hummus sounds fantastic. I bet it was perfect with you chips!

I still don’t like Mondays. I don’t dread them know that I have a job I really like but it is still hard getting up on Monday mornings.

Oh spring break, it has been so long! We went to Florida freshman year on a greyhound bus. Big mistake. Senior year we went on a cruise and that was so much better. No drama and some of my first international travel.

Sounds yummy, Sarah! I have never gone on spring break. Not once in college or high school. But that’s all right. I’ve taken some pretty rad vacations in the summer and fall! :)

OMG this looks SO good! I’ve been obsessed with caramelized onions lately too! I just made a pizza with basil, spinach, feta and the onions…gahhh so good…must make this hummus now too! good think i have leftover onions :)

This looks ah-mazing!!! I’ve been super into caramelized onions lately; last night I made a bunch along with peppers and threw them on a grilled cheese, and tonight I just finished caramelizing another batch for tomorrow’s lunch… So can’t wait!
