good morning!
i guess i just went ahead and took a day off from blogging yesterday, huh? i’m fine with that. i try to blog every weekday and most weekend days if i can, but if i don’t get to it on weekends, i don’t stress about it. with everything going on in the upcoming weeks, there might be a couple more missed weekdays, too.
anyway, i’m not here to talk about my blogging schedule. today is all about the food! yesterday’s meals, in fact.
i started out my day with an iced coffee, which i enjoyed on the bus on my way into lab.
i used about 2.5 cups of coffee, 1 tbsp sugarfree hazelnut syrup, and about 2 tbsp milk. it’s delicious! i’ve been rotating between hazelnut and salted caramel syrup, but i think salted caramel is my favorite.
breakfast was eaten in lab and was pretty simple – a lemon chobani.
(yes this is honey flavored – i forgot to take a photo of the lemon one before i ate it….)
i haven’t been feeling hungry for breakfast until about 10am, so i’ve been eating smaller meals because i am usually ready for lunch around noon or 1pm regardless of what kind of breakfast i eat.
i walked to badger market a couple buildings over to pick up lunch yesterday. i was unprepared and didn’t pack much to eat.
i was happy to see this salad at the market though. it was surprisingly good! it had lots of good lettuce (not just romaine), cucumbers, tomatoes, onion, yellow bell pepper, kalamata olives, grilled chicken, and feta.
i also got an iced coffee at the market for an afternoon pick-me-up!
after work, i scrambled around and did a ton of food prep. i washed and prepped all of our csa veggies, pre-made brad’s breakfasts for the week (now that we’re avoiding grains, he’s been having eggs every morning, but i can’t make them fresh every day, so i make them ahead of time), cleaned our coffee-maker, and made dinner.
this was a really easy dinner that kind of randomly came together. we had some ground chicken in the freezer, so i thawed that and browned it was spicy taco seasoning.
then i steamed a sweet potato in the microwave and started piling things on.
that’s sweet potato on the bottom, taco chicken, sharp cheddar cheese, salsa, tomato, and roasted zucchini & mushrooms.
it was very good and very filling! this left me stuffed….for about an hour.
then i had a couple bites of ice cream straight from the container (no photo evidence – it happened too quickly!).

if you drink coffee, do you usually make it yourself or buy it?
i try to make my own as much as possible, but sometimes buying it is so convenient! i have a hard time passing up a coffee shop if i’m out running errands or something.

I LOVE me some iced coffee. And keep telling myself I need to make my own.
Because the coffee charges add up!
And the sound of salted caramel syrup… yum!
Okay, inspired me to make my own. Will try to do so this weekend.

Haha I love the comment about the ice cream — it happened too fast! I know that feeling, when I eat three cookies and then think, “Wait, what? Did that just happen?”

YUM!! Please come cook for me?! Also, how do you like the lemon chobani? I grew up eating only lemon Dannon (which I couldn’t find when I left NJ… literally, ANYWHERE!) but I hate yogurt with any bits in it, and I know their fruit yogurts have fruit bits (I’ve tried the pomegranate and couldn’t enjoy it because of the bits). I had no idea chobani even made lemon!!
