good morning everyone!
i’m feeling a little sluggish this morning – i was woken up around 4am by a puppy with tummy troubles.
[trust me, “puppy tummy troubles” sounds much cuter than the nastiness that i had to deal with…]
by the time everything was cleaned up. it was almost 4:30 and i only had about 15 minutes before my alarm went off for my workout. i laid down for about 3 minutes, then gave up on getting any more sleep and squeezed in a couple extra minutes at the gym. i guess that’s a win?
too bad i’m super tired now!
thank goodness for coffee & caffeinated protein powder.
anyway, i’ve got another edition of what i ate wednesday for your drooling pleasure….

breakfast = hot oats.
nothing new there!
i love love love hot oats. i always miss them on week-days so it’s hard for me to eat anything else on weekend mornings. this batch, like always, has some very cherry berry blend buried underneath.
lunch = breakfast again!
brad loves to sleep in on sundays, so i usually am up by 7 or 8 to eat my hot oats, and then when he rolls out of bed, anytime form 11am-1pm, we make breakfast round 2!
my portion is on the light blue plate and his is on the dark one. this meal consisted of some red poatoes cooked with red peppers and onions and an omelette with spinach, mushrooms, and shredded chicken. i also had a bit of cottage cheese on my plate!
i love savory breakfasts, but always choose to make myself oats, so it’s nice to get a second chance at breakfast on sundays!
dinner = quinoa muffins
as soon as i saw cassie post this recipe, it was pinned and i added it to our meal plan!
i only have one mini muffin pan, but the recipes makes 48 mini muffins, so i made one batch of minis and one batch of full-sized muffins.
these were delicious!
they were also dangerous because they’re bite-sized. it’s too easy to just go back and pop another one in your mouth!
i ate a couple of them plain and then added some sour cream + salsa to the last couple, which totally brought them up a notch. we will definitely eat these again.
throw in a couple bottles of water, a protein shake, and some chips for a snack and you’ve got a whole day of my meals!

now i’ve got a busy, and long, day ahead of me!
how do you push through when you’re feeling sleepy?
so far, i’m turning to coffee… i’m also contemplating a mid-morning/lunchtime walk to get some blood flowing and hopefully wake me up a bit!
